Ingredients


  • 1 med/large potato, grated

  • 1 small carrot (optional)

  • 1 med onion, roughly chopped

  • 1 beaten egg

  • flour to bind

  • salt

  • pepper

  • spices e.g.paprika (optional)






Recipe


  1. peel/scrub veg

  2. grate potato (and carrot)

  3. slice onion

  4. Heat 3 or 4tbsp oil in frypan

  5. stir beaten egg into veg mix

  6. add seasonings to taste

  7. add flour to bind

  8. with floured hands, make 2inch balls and place two or three at a time into heated oil, flattening to about 3/4\".

  9. fry on medium/high

  10. turn over when dark golden and cooked through.

  11. repeat for additional mixture.




Comments

to make sure they\'re cooked through, cut one in half before removing from pan. if necessary, flatten more to speed cooking and reduce risk of burning on outside and under cooked in middle.

i\'ve made these with a mix of 50/50 potatoes and root veg to similar quantities.
