If I were making a very simple soft cheese with standard full fat milk, roughly how long would I need to wait for the product to be strainable?

Roughly a couple of hours in my experience. Say up to four. I haven't made that much cheese, so this is just a rough figure.

I found a method here for a traditional Indian cheese called paneer which looks so simple that I think I am going to give it a go -

It says the milk needs to simmer for about 5 minutes before adding lemon juice and vinegar. Then just keep stirring until "the whey is nearly clear".
