Bored of Ceps I went for other stuff...
Clockwise from top left. Stag antler (foraged by Tom the dog), huge Cauliflower Fungs (lots of this about), Winter Chanterelles, Hedgehog Fungus, Bay Boletes and Bay Boletes.
Winter Chanterelles...
Also found lots of Blewits but I'd eaten those before I took the pics. |

very impressive Peter what a season it is ,tomorrow i'm going to look for hedgehog and winter chanterelles.I've been foraying in Suffolk for 15+ years never found them here got any tips??? |

Erm.....guys....I've been wondering. What do you do with all those mushrooms? Can you actually eat them all? I mean, I don't find anywhere near as many and I struggle to finish them all. Maybe I need more recipes........... |

I have only found Winter Chanterelles on acid soil. They prefer coniferous woods but I've also found them with beach. In my experience the best spots to try are:
Acid soil
Coniferous woodland
Mossy damp ground with buried twigs and bracken - no or little grass. Trees randomly spaced and not too close together.
They can be hard to spot so look at the base of the trees. They usually grow in big groups. If you see one have a real good look around - pull they bracken back etc. One tree can have over 1kg of Winter Chantereles growing around it. |

I eat as much as I can fresh. The rest I preserve, give away or swap. Some of my recent mushrooms have become a 4.6kg saddle of venison and two partridges. Now, how am I going to eat all that game? |
