Have a look at this website. I came across it while I was reading up on Gloucester Old Spot pigs. It certainly gave me room for thought and most definitely made my mouth water too.

I'm sure their products are genuinely delicious but that's one of the worst websites ever. Doesn't work on mobile devices, full of typos, and inaccuracies.

A half day paying someone competent would pay for itself in no time.

Well at least you've made a comment Nick. It was the GOS pigs and the superb products that these people produce from them that was of interest to me.

some interesting flavour ideas but i have found that herbs on hams etc reduces the shelf life from years to weeks

ummm spose shelf life dont matter if one can eat it in a few days

even if there are no added nitrates to this stuff ,which is good ,all cured meats will contain nitroso amines etc ,the reactions just take longer than when using nitrates in the curing salts.
