Ingredients


  • mixture of

  • tomatoes,

  • courgettes,

  • aubergines,

  • onions,

  • peppers,

  • fresh or dried herbs(oregano or basil)

  • tbsp cooking oil

  • seasoning to taste




Recipe


  1. cut all to similar sized pieces.

  2. fry onion for few minutes in oil

  3. add remaining veg and stir.

  4. reduce heat to med, keep stirring to break up toms.

  5. add a little water if necessary.

  6. add herbs.

  7. cover and simmer till tender (30 mins or so)




Comments



use double number of toms to make it juicy. no need to skin toms if cut small.

italian seasoning works well.
