Ok, this is what I did:

Pit 3kg cherries
Simmer till soft
Cool and refrigerate for 24 hrs
Add 3kg sugar
simmer till sugar dissolved
Add juice and skin of 3 lemons
Bring to rolling boil for 2 mins
Remove from heat
Add 375ml pectin
Stir well and jar

It's looks like it's going to set

Yep, that was a set.

Not sure if the boil and leave to rest had any impact or not but it's definitely worked.
