Remember that gorse flower is best drunk young. I was a bit gutted that out of the 6 bottles I made last year, only four were drunk in peak condition. You know about the fifth bottle, and there's still one left.

I can remember that bit of the evening. We drank one the day I bottled it, and shared a bottle with Fee yesterday.

Bottled two gallons of strawberry. Another one for short-term drinking I think. It's got a really nice primary strawberry nose at the moment which I think would disappear if it was kept for too long.

Gallon of blackberry on today. Birch sap is looking about ready to bottle. Gooseberry still very cloudy. Everything else is blipping away merrily to itself.

Blackberry into a demijohn. Used too much water. I reckon about 4pints with 4lb blackberries would have given me a gallon.

4 gallons of apple juice started as cider. Potential alcohol just under 9%

Sounds good, I have had to stop brewing until we move house - hoping to be in before the end of the month, can't wait to get bubbling again.

What should be the first thing I get going?

Dunno, it depends what you like really. Also this is my first year brewing in any quantity since beer kits as a student, so I'm no expert.
Just put a gallon of perry on though.

At this time of year, crab apple, apple or pear wine. Sloe if still around. Ginger's a good one to make for drinking next autumn/winter.

Bottled the birch sap. Dry, quite delicately flavoured, not too alcoholic. One to make again. Shame it doesn't stay that weird blue/white colour.

Cider racked into DJs to continue fermenting on Sunday. Started two gallons of ginger mead today.

You're really getting into this, Sean.

I've got 18 gallons of Damson 07 to take off the pulp sometime today. 6 galls of Nettle to second rack, and 5 galls of Damson 06 to get ready for bottling tomorrow. I'm trying to avoid thinking about the other 42 gallons of Nettle I need to rack...
