A big suprise today. Meat from an elderly heifer.I've now had two dexters slaughtered in my short time of keeping this breed
The first one I sent in the September before last. He was an under 30 month non short entire bull and when hanging in two halves weighed 220 kgs.
Yesterday I took a non short fat not very big heifer for over thirty month slaughter ( she was three and half years old) expecting in my own mind to get a round 150 or so kilos of not very good meat.
I've phoned up the large commercial abbatoir that I took her to today and had a very large suprise. First of all the carcasse weighs 224 kilos and secondly they have described it as being of top quality. They said that if they were exporting it, that they would have had to have trimmed a bit of fat off it but that it would have been sold as top of the range.
I know next to nothing about this game but now I realise that I know even less.

I feel just the same about our pork! Hate trying to work out prices so I look at what other people are selling similar for.
If you're freezing any I could transfer from your sold box to mice at Aber... What I'd really like is some kind of rib joint and mince...

I may be up for some from the old dear too, although I'd be at the church mice end of the scale; skirt, flank, shin.
If Mochyn has space (or any of the sluts) in a freezer than there's a chance I may be going down round there sometime in late December.
Don't know about price, so how about a pound a pound? (cheeky, I know )

Mrs Satan ( the cows name) came home to the freezer on Monday after three weeks hanging and is to die for. The boys had steaks for tea the first night and they were to die for. At three and a half years old, her meat is melt in the mouth tender and knocks the bull that we killed last year into a top hat.
Cattle breeders IMO shouldn't mess about trying to breed or sell sub standard or surplus heifers, (or cows) they should eat them. We certainly wouldn't hesitate again.
