All Bran CakeAll Bran Cake
Was talking to some-one in Twitterland about this cake so thought I'd also post it here:
4oz All Bran
4oz soft brown sugar
10oz dried fruit of your choice
Grated rind and juice of 1 orange
8fl of yoghurt
4oz (wholemeal) plain flour
Place All Bran, sugar, fruit, rind and juice plus yoghurt in a bowl. Mix well, cover and leave for 30mins
Stir in the sifted flour and place in a greased 2lb loaf tin
Bake at Gas Mark 4 (180 degrees C) for 1/25hrs or untila clean skewer inserted into he middle comes out clean.
Best served sliced with lashings of butter.
