Almonds

OK, I reckon we'll end up with at least 25kg of dried (in shell) nuts, all Robijn which are a touch bitter, very marzipanny. It's really no hassle at all to go through that amount for our own usage but it's the bitterness....

Any ideas what we could do with them, bearing in mind neither of us like marzipan?

I was planning to grind the ones we've grown this year and use them in cake mixes as Bugs has a few recipes that use ground almonds.

I can report back to say if it tastes too marzipany?

The missus suggested that, what are you going to grind them with?

As they'll still be moist and not too hard I'll just use the chopper/liquidiser attachment thingy for our hand blender. It works ok with fresh hazelnuts but I'm not sure how fine we'll get them.

I was going to dry them and then blanch to remove skins, both bits apparently reduce bitterness, before grinding. Mum's got a huge and very warm airing cupboard.

That's off 26 3 yr old trees in case anyone's interested. I guess you must lose at least 50% of the wet (post hulled) weight in drying, so we started off with probably 70kg of nuts in hull (the fleshy outer layer), 50kg of dehulled nuts, I reckon 25 kg of dried nuts, wonder how much that'll be in shelled nuts? Not more than 10kg I reckon.

10kg of ground almond is still an awful lot of bakewell tarts.

There's quite a few nice cakes in the recipe data base using almonds. Italian recipes often use them instead of flour. I've also had Penny's chocolate brownies made using almonds, and that worked very well - so much so I think I'll do it that way myself next time.

If I ever get round to it I'll let you know what flavour the 30kg of 'wasteage' from the FIL's 102 trees.
