Aloo Tama Nepalese curry

Made this again on Saturday using vacuum packed sour bamboo shoots from our local Chinese supermarket but it works well with tinned bamboo shoots.

1 cup bamboo shoots
2 cups potatoes cut into 1/2" cubes
1 cup black eyed beans soaked overnight
1 tsp cumin powder
1/2 tsp chilli powder
3 cloves garlic chopped
1" ginger
1/2 tsp turmeric
1/2 tsp black pepper ground
1 cup veg stock
1/2 cup yogurt
1 cup chopped toms
salt to taste

Saute onions till brown, add spices ,salt ,garlic fry 2 mins
add potatoes fry 5 mins,add soaked beans,bamboo shoots,toms heat for 2 mins, add yoghurt veg stock and bring to boil, simmer for 20 mins until beans and potatoes are tender. garnish with coriander serve with brown basmati rice.
