It's not so much what you can grow but what you can sell. Where are you? What's your market? How will you be selling?
And keep it legal.

Anything that can be shipped by mail or courier in a regular shaped package.
How about baby greens, micro veg, sprouts (as in sprouted beans etc) and various grasses for juicing (wheat, barley, rye, and oats)?
Or salad leaves and find a local rest. to take them?
Or any other veg you like and sell those through Country markets

Someone's doing this in Yorkshire. They stumbled into the market, because no-one else was, and now they have huge contracts with the supermarkets (as well as smaller, more local places). A huge money spinner for them.

Herbs.
Very high value per kg.
Year round demand. Not much 'education' needed.
Other than that, yes salads. And they grow faster than most herbs.

From the responses above it seems a mixture is best to keep you in income throughout the growing season, which means that a polytunnel or two would be a wise investment.
For a more long term approach to you add PSB and asparagus to your list.
I noticed my local lidl selling horseradish root, first time ive seen it stocked anywhere!
