Bacon and Beans

This is a Fergus Henderson that takes a bit of time but is worth it. First grow your pig...

Serves about 6 and you'll need a couple of big stock pots that can hold at least 5L. Or some large bowls to reserve stuff.

1kg of Haricot beans

1 pigs trotter
2 carrots - peeled
2 onions - peeled
2 sticks of celery
1 head of garlic
bundle of herbs (rosemary, thyme, parsley)

1kg of streaky bacon in a single piece, take the skin off and keep, slice bacon into thick strips, about 1cm.
3 oninons diced
2 leeks chopped
1 tin of plum tomatoes
2 heads of garlic

First soak beans overnight in plenty of water. Then drain them and cover again with fresh water. Bring to boils for 10 mins, skim, then simmer on very low heat for 1 1/2 hours with the lid on. When they are done take off the heat but leave in the pan with the liquor.

Meanwhile put the trotter in a big pan add the onions celery, head of garlic and herbs and cover with water. Bring to boil, skim and then simmer for 2 1/2 hours with lid on.

Preheat the oven to about 180c.

Then put some oil or preferably duck fat in the bottom of a large stock pot. Fry the piece of bacon skin fat side down to release its fat, remove and reserve. Brown the bacon in the oil, remove and reserve. Add the onions, leeks and tomatoes and sweat down for 20 mins. Add two ladles of the trotter stock and cook for a further 10 mins. Drain the beans reserving the liquor. Add the beans to the tomato onion mix and stir well.

Get another big oven proof casserole or stock pot stock pot, 5L capcity at least. Put the piece of skin on the bottom. then a layer of beans. Then a layer of bacon. Then a layer of beans. Then the pigs trotter and the two garlic heads. Then a layer of beans. Then a layer of bacon. Then a layer of beans etc. Pour over all the trotter stock until the beans are just covered. If you run out use the beans liquor or chicken stock to top it up.

Put in the oven with the lid on for 2 hours, remove the lid for the last 30 mins to crust up the top.

Serve.

That's one of my favourite things for a cold day. I usually add a spoonful of molasses and a bit of mustard à la Boston baked beans, but it's great without too.

A kilo of dried beans between six - that is one heck of a hearty meal, too!
