Banana Cake

• 4oz butter or margarine


• 6oz sugar


• 8oz self raising flour


• 2 eggs, beaten


• 2 large or 3 medium, very ripe bananas

1. Preheat oven to 180c and grease a 2lb loaf tin.


2. Cream the butter and sugar in one bowl, and mix in the beaten egg.


3. Mash the banana with a fork in another bowl.


4. Add the two mixes together, then add the flour.


5. Pour into the loaf tin and bake at 180c for 40 minutes.


6. Turn the oven down to 150c and bake for a further 25 minutes.


7. Turn out on to a rack and let cool.
