Belly porkOk - so I cooked this for my family and none of them would eat it because it was much tooo fatty (apart from me )
So I ended up rendering the leftovers.
What do you all do with the "fatty" cuts?

Choose the least fatty portion on offer; cook on high till fat is crispy, then use in dish; or cook on low till fat melts [they'll never see it till the dish is cold]

jamaican jerk style is good, coat the meat with a paste of dangerous spices, then cook very slowly for a lvery ong time- think of it like very thick bacon in a way, wobbly bacon fat=bad, crispy bacon fat=yummy

Bellies from my pigs get made into streaky bacon or minced and used in sausages.

Imagine not liking the fat? I served belly slices to some friends once, and most of them picked around the fat

Ours, too, but we roast the thick end, stuff the fat - we have about two a year, I reckon!
It does make very good bacon (they'll love it then!) or you could mince it and make sausage burgers. My last batch suffered without it, and are very dry.

Braised your belly for quite a few hours or even over night at a very low temp.
Press the belly so it is flat ........tins and trays.
Press in fridge.
When chilled and set.........
Cut into 1.5cm strips dust in flour and fry.
It becomes crispy and more apealling to the softcore.
Very nice.

Belly pork - mmmm - so yummy! Best crackling! Great dripping! Fabulous cold with mashed potatoes and pickles! Great late night pickings from the fridge! Don't give up.
