Best 5gal general purpose wine for this time of year?Got a 5gal ferementer becoming empty in the next week or so. Am really only in a position to put on one batch of wine in the next couple of months. So, what would be a good choice for brewing up at this time of year?
If all fails I'll put on a basic apple juice and root ginger mix so its ready for next winter, but I'm sure there must be something more inspiring to brew at the moment.

I've always had better luck turning elderflowers into syrup rather than wine, but thats a good reminder to make some of that too

thats an idea, do I want 5 gallons of it though Definately must try to find space for a gallon though

I've got five gallons of it sitting on my desk at the moment. It's nearly ready for racking too. I likes nettle.

Elderflower. More people tend to like it.
Nettle is a love it or hate it thing. But that would be my second choice if I only made one spring wine.
