Best ever hash brownsFrom jemas experimental Kitchen, dehydrate potatoes (I used a mashing variety) that have been blanched for a few minutes and cooled and cut into slices for the dehydrator.
dehydrate for about 10 hours (obviously depends on the kit) until translucent.
This is done with a lot of potato's as they will keep for a long time.
Take some and blitz along with dehydrated onions.
season and add sensible amount of water and leave in fridge for 30 mins.
The resulting mix is shapable, holds together and makes totally amazing hash browns.

It's not like for like, but I think better. As a product it is healthier, just a final quick shallow fry, and the onion and seasoning make it very tasty.

In further experimenting trying to do the same by dehydrating previously blanched and frozen potatoes is an unmitigated disaster the texture goes all wrong and they don't stick together.
