Burdock. When do I harvest?Is there a best time to dig burdock roots?ie. before flowering? when the leaves die back? in the spring when they start to shoot? Or doesn't it make a jot of difference?

Thanks. According to that the later harvest will have more flavour so for beverages I would think thats best. For eating earlier.
