Carbonara recipe please..?

Bacon - eggs - parmesan - is that it?

Do I fry the bacon and add the eggs or just mix the raw beaten eggs in with the cooked pasta?

Pretty much. A purist carbonara would be to fry the panchetta 'til highly crispy, add in the pasta and mix, then add in egg yolks and parmazan, mix quickly and serve before the egg cooks.

I add a bit of cream to the eggs as a like it a bit creamier and a bit less scrambled-eggy

I'm a complete philistine and use cream instead of eggs, but for us carbonara is a quick fattening lazy meal, so thats ok I reckon Smile Embarassed

Eggs and cream well beaten, lots of black pepper, then mixed into very hot pasta with parmesan and bacon bits, pre-fried.

We fry bacon, garlic and maybe an onion together til crispy, stir in cooked pasta, add a splash of cream and stacks of pepper and serve immediately, in big bowls, on the sofa, with cheap plonk. If there is a bit of fresh herbage, that goes in too, but its overkill really. Heaven at the end of an hard day Cool

Naturally, I do it another way - two eggs, two egg yooks, a splash of cream if there is one hanging about, and LOTS and LOTS of fresh parsley and black pepper, plus pancetta fried until crispy.

Yum. Wonder if we've got any eggs..........
