Cassis.........

Has anyone made cassis with frozen blackcurrants? I still have a load in the freezer and the new seasons fruit will be along soon!

easier than fresh cos the fruit is a bit mushy and takes little breaking open

i use equal volumes of berries and vodka which gives a final abs of around 20%

smash up the berries,steep in the vodka for several months ,sieve ,bottle.

Buy 'alcool pour fruits' seeing as you're in that France. Cheaper than nice vodka and nicer than cheap vodka.

very large kilner jar full of vodka and blackcurrants started for cassis.
How long does this take ?

I made blackcurrant cordial with the rest of the fruit..making room in a small chest freezer Laughing
The sieved pulp is back in the freezer until next week for blackcurrant and apple cheese.

I left mine for 5 months.
