Mint jelly. And if you leave the mint out you've got apple jelly.

Crab apples make superb jelly.
Put them in a pan, cover with water, boil gently to a pulp.
Strain the pulp through a tea towel, never squeeze it, you'll end up with a tea towel tied into a loose ball with string, haniging over a bowl, give it a day or two to drain.
Measure the liquid; add a pound of sugar per pint of liquid, boil it to setting point and jar as for any jelly or jam.
When you add the sugar, you can also add rosemary, or mint, or cinnamon and spices... Whatever takes your fancy.
Better again is to use half crab apples, half rowan berries. Or crab apple and blackberry.

i make this regularly - usually it doesn't quite set and ca be a bit runny - so now i add a bit of pectin.
My last batch is with added blackcurrants
I also treat my early falls off my apple trees (you know them that drop off before they've grown properly) as crab apples and make crab apple recipes with them.
Of course you can also use them in chutneys - with whatever else you have to hand .
and they make beautiful wine. ... ah yes that's where they mainly end up..

Crab apples can be rather variable on setting - sometimes the addition of lemon juice will set them, sometimes they just won't set. Using preserving sugar with added pectin can't hurt, or just boiling the bejeezers out of them till they damn well set can help.
