Curing turkey meatHi, I've just recieved two giant boned turkey thighs. Does anyone know if they can be cured like ham or bacon?

I don't see why not.
Turkey bacon does exist. I've never tried it, though, so I couldn't say whether it is worth eating at the end of the process!
Cured duck, OTOH, is a very Good Thing.

It is possible to dry cure or wet cure your boned out turkey leg. Be sure the cure is aromatic. I would cure for about 24 hours only though.
I would Hot smoke over Hickory or maple. O ak would be too strong.#
