Dried fruit in chutneySorry if this has come up before, but Oim new 'ere, and it would mean a lot of back-reading to find out.
Q; when chutney- making in general, do raisins, currants etc have an important role in the great scheme of things? Because dried fruit disagrees with me and I thought I'd leave it out and increase the other ingredients. What do you think?

With chutney you can get away with pretty much what you want I think, except the vinegar and sugar of course. I sometimes leave the dried fruit out when I make it and it turns out OK.

I guess you might want to increase the sugar content as dried fruits are quite sweet, and maybe reduce the liquid parts ?

I hate dried fruit, and prefer chutney without it, so yes, you can, and it's nicer.

@ goosey - have you got recipes for chutneys withut dried fruit ?
I'm sure I have at least one in a book somewhere, but think it's plum, so not very seasonal at the mo.

Do you dislike semi-dried apricots - the ones you can eat out of the packet?
They are lovely in chutney - natural sweetness and a good flavour too, quite different to the raisin/sultana/currant family.

Not as such, I thought I'd try rhubarb and ginger or what's in season, but my recipe has dried fruit. I'll just leave it out. I love chutney, or any recipe which is basically 'chop it all up and put in one pot'.
Plum sounds delicious, I've got a tree, and it will be in fruit before we know it. Thanks

Yes I love them Madam Bear, but I think the problem is the 'dried' aspect cos they do it too! Plums are raisins aren't they, but fresh ones don't have that effect. Sorry everyone.

Well, OK. I exagerate. I dislike sultanas. They ruin a good chutney/pickle for me. Quite like raisins, tho. But this may be because they appear in chocolate bar type things.

I only buy dried fruit for xmas cake and pudding - usually around October. Any which are left go in with the end of season cucumbers and courgettes with a hulluva lot of spice. Apart from that all my chutneys are dried fruit free.
A jar full of currents is kept over for (old school dinner ish) curries.
