eight eggs a day and looking for ideasHallelujah! we're now having eight eggs a day and I swear it's because I talk to my chooks in Welsh and English and feed them a mid-day treat (currently a nice selection of borage plants and some other weeds).
This summer, I bought five chooks, then around a fortnight later, I bought another three chooks. For many weeks we had five eggs, then suddenly it turned into eight eggs. One day I even collected nine eggs.
What have other Downsizer people done when suddenly faced with a glut of eggs ?

Make quiche and freeze it.

freeze souffle (has added bonus of being courgette flavoured and freezes fine!)
merangues - will keep virtually for ever
Oh - and pasta, will freeze or dry

Quiche. Brill way of also using up lots of seasonal veg. Here's a what I"m making at the moment:
quich with smoked salmon and seasonal veg.
Fry up onion and courgette/marrow
Lightly boil peas and french beans
Mix all the above with eggs, cream and sliced tomatoes. Sprinkle grated cheese on top and bung in the oven. Lovely.
