Freezing bacon

I have just defrosted some pork to turn into bacon (lardons) - can I then refreeze it once it is salted?

well I do and have not died yet

I dont think there is anything dangerous about refreezing things, the danger is in how long something is hanging around raw being frozen or being thawed multiple times* . So when using home grown pork - you know it is uber fresh before you froze it, it is just a matter of being aware of how long it hangs around for each phase.

Not sure why but I haven't had much success freezing bacon. It doesn't last as long as fresh pork and acquires an off-taste after just a few months. Currently, I have a side cut into portions in the freezer which I defrost and cure as and when needed.

I tend to freeze mine for no more than a couple of months - I have had less luck keeping my bacon in the fridge as I don't like it very salty!
