Freezing curry and gratinWhen you freeze curry is it with all its spices etc or the basic veg ready to be added to a fresh cooked spicy mix? I'm sure my old freezer books talk about spices and/ or garlic changing the flavour of the frozen dish. Any tips?
Also, I found a nice potato and beetroot gratin recipe at www.grouprecipes, it's cooked in loads of cream (garlic and thyme flavoured) and very yummy. Do you think it'll freeze ok with all this cream?

Twaddle, I often freeze left overs, no adverse effect on flavours

Curry freezes well, at all stages.
Don't freeze teh gratin with cream in, it will separate when defrosted, looks and tastes not good.

Most curries improve with time as they mature. This still happens when frozen. The best curries are always a few days old.
