Freezing peas

Can you freeze moungetout peas, do you give them a quick blanche, let them cool, then freeze them? (Please forgive the spelling)

Yep - mangetout freeze fine - blanch for one min, cool and freeze in useable amounts as they tend to make an unbreakable block.

Tip: rather than leave them to cool, when they will still be cooking to a certain degree, plunge them immediately into cold water to stop the cooking process and get them cold asap. Make sure they are dry too; open freeze them on trays, then you can take out as many or few as you want, and they freeze better that way.

And an excellent tip that is too, it stops them cooking more than you want. Rather than freezing them in trays, I've taken to putting peas/beans (once thus cooled down) into the salad spinner, spinning off the excess moisture, and then allowing them to dry before bagging up for the freezer. Seems to work well enough.

Only 'cos your salad spinner isn't a fetching bright orange 1970's model like mine (any excuse to use it really) Laughing
