Fridge Alterations

Hi all,

I have acquired a fridge to be used for curing etc.

Has anyone tried altering a frdige so that it's temp range is higher - say 10c - 15 c?

I could of course leave it turned off. How do other people control

I once considered using a fridge for curing too, but I was put off by a number of reports that the plastic interiors of fridges made them unsuitable. Thoughts, anyone?

I'v not noticed a problem, I think the container that you're using is more of an issue as certain plastics are degraded by high salt/sugar content. My curing fridge is down the cellar which is usually about 15c and I set it on minimum.

I cure hams i my fridge. It does corrode the plastic a bit, but no other problems. I haven't tried any real serious stuff, like dry cured hams or salami, though.

I wonder if I'm confusing curing with cold smoking?
