Fruits of the Freezer Wine

I made an unusual wine about five months ago using lots of old frozen fruit from the freezer. I have sampled some and it has a nice fruity zing to it. It won't win any awards but I'm happy to have converted some freezer oddments to a palatable wine.

The ingredients included : cherry, plum, apples, rhubarb, blackcurrants, raspberry and perhaps some other fruit I've forgotten!

All these were mixed into a 5 gallon plastic fermentor. I added some raisins/sultanas and sugar, yeast and nutrient. Fermented for a couple of weeks. Racked into demijohns. etc.

Doesn't freezing break the fruit down and make it better to ferment?

Ah, yes . It does break down the fruit and make it easier for the juice to be exposed... and thus to ferment.

I've just remembered GOOSEBERRIES. There was at least 3kg of gooseberries in this wine.

the freezer is a regular part of my winemaking

blackberries are picked regulary and frozen - when i have enough for 5 gallons and the time I make the wine.

Mixed fruit wines are good by desing but there is another one i do regulaly .
On my kitchen windows are two demijohns - on for red and one for white
whenever i rack off a wine all the dregs go into there and get saved till there is enough .

They always seem clear very quickly and make nice wine.

Once a batch tuned to vinegar so i had nice red wine vinegar for cooking instead which was great for sauces and marinating and i didn't mind as it is all stuff that wiould hqave been chucked away otherwise!

but generally the wine has turned out very good indeed which aint bad for an accidental final recipe made from slops!
I never met anyone else who does this - but I've been doing it for about 10 years now!
