Gherkin questionDoes anyone have a good recipe for pickled gherkins that brines first - so avoiding shrinkage in the jars? Yesterday I pickled the first of my gherkins using the "pack them in with vinegar/brine and boil the sealed jars" method. The result is always delicious, but the contents of the jars look pathetic after a day or so.
Tonight I shall be pickling the shallots that I've got brining. Yummy.

Hi. As follows ..... prick gherkins and soak for 72 hours in brine. Drain, pack into warm jars and cover in boiling spiced vinegar. Close the jars and leave for 24 hours. Drain vinegar into pan, boil and re-pour over gherkins, leave another 24. Then repeat drain/boil for a third time. Top up with vinegar if necessary and seal jars. I usually add some small sprigs of dill before the final seal. Ready in 6 weeks.

A Gherkin GlutI have so many of the things growing. I have pickled some, leaving over night in a bowl with salt. Drain and rinse well. Boil some white distilled vinegar with pickling spice Put gherkins in jars, and cover iwth cold spiced vinger. I also find that they do not keep well after a few week. Kind of go a bit wishy washy looking. GILL
