Haloumi & Courgette Burgers

600g courgettes, coarsely grated
150g Halloumi cheese, coarsely grated
2 eggs
0.5 tspn toasted and ground coriander seeds
0.5 tspn ground black pepper
1/4 tspn ground fennel seeds
small bunch of mint, chopped
2 cloves finely chopped garlic
1 finely chopped chilli (optional)
2 heaped tbspns finely grated parmesan
2 handfuls dried breadcrumbs or Pan rellado
Olive oil for frying


Squeeze as much of the moisture as you can out of the coarsely grated courgettes. You can just use your hands for this, but I prefer to use a clean tea towel. Fold the towel around the courgette to form a ball and squeeze to remove as much moisture as possible.

Mix the courgettes, halloumi, egg, mint, garlic, chilli, spices, breadcrumbs and parmesan together in a bowl.

Shape the mix into burgers. There should be approx 8.

Heat the oil in a frying pan, and fry the burgers on a medium heat until they are browned on each side (approx 3 mins on each side). Easiest to use a non-stick pan and be very sparing with the oil.

Finish off in the oven for 10 minutes at 180 deg C.

Lovely served in a burger roll with lemon mayonnaise or with a salad and a squeeze of lemon over the burger patty.

I need to scale this up to go with the approximately 600 kilos of courgettes I seem to have!

They turned out really well. Freeze well too.

How do they do on a barbecue?

I think it would be a bit risky on the BBQ. They would probably fall apart.
