Hello all

This is amazing!! I thoght I was an odd dreamer to want to be a downsizer?! Currently living in Birmingham?! I know right, but university calls! Originally from Lincolnshire, would LOVE to down size, watching Hughs chicken run has really put me off the commercial side of things, but anyways quick hello to all! Hope I can join the dream one day... Smile

Lol, there was an article on here about smoked mackerel and thats part of my HACCP. Im training to be an environmental health officer, not sure whether that gets a booo or a yay Confused but the downsizer dream gets me through when the going gets tough!! trying to convert my sister too, who is much better equipt as she actually owns a house, shes going to get chickens soon so thats a start!

Lol, cheers, but i really need to know how commercial places buy, prepare, smoke and vac pack their mackerel, tediously dull stuff im affraid.., but if you want a job i guess you've gota work right?

Where abouts in Linconshire are you from? I lived near Epworth for a while when i was a kid.

I live in cerntral Lincolnshire, rite in between all the 'major' towns/city. My dads a medium sized arable farmer and my mums a prize winning veg grower, i feel however i havent inhertited a tallent for either of their skills Confused

Hi Ani, welcome to Downsizer.
I did HACCP plans as part of my recent MSc course in Organic Farming (though not specifically smoked mackerel), and have done one for my winemaking business, and have contacts with my local EH/TS (or Environmental Standards as they're now known here in Scotland).
Is this in general, or for an assignment ?

Pilsbury's yer man for meat/fish-type HACCPs, I'd reckon. Or Jerkymeister.

We have to create a HACCP plan as part of our food safety/hygiene part of my MSc environmental health and stupidly i said id prefer to do mackerel, its a group work thing, but we've only got 4 weeks to do it and lots to do beside so am affraid that it will get left behind behind the fear of prosecution files and housing essays! have found a few things and hoping someone else from my group has done something to, tho i fear that may be toooo hopeful! So what does everybody else do?

Hi Ani Welcome - I too was at Birmingham Uni - Dip. in Food Safety & Food Legislation (The Higher Cert. !) approx 2 years ago. It was in my surfing / not doing uni work moments that I stumbled across this site. I never upsized - so it is great to see the debates etc from like minded people.

Oddly enough, the Brum Uni mountaineering club were known as The Stoats.

It's a fine place, but the second best uni in Brum. Cool
