Help! Chilli jelly?

Somebody, somewhere on here wrote about making chilli jelly by adding chillis to apple or crab apple jelly.

But I can't find the ref anywhere!

Am I imagining it? If not, please tell me - or anyone could make suggestions - as to how much chilli to add - when to add it.

I have the crab apple juice strained and waiting to go - and some lovely red chillis as well - but want to know how best to combine the two.

I usually put the chillis [minced / chopped / bashed, including some seeds] in a muslin bag, and hang this in the crabapple juice while warming, adding sugar, and boiling to a set.

Depending on how hot you want it, and how much juice you have [say, on average 4 pints juice and 4lbs sugar], I use 12-18 chillis, the little red or green birdseye kind.

If I want bits of chilli in the jelly, I slice a few of the chillis - thoroughly deseeded - into rings and put them in the pan instead of the bag.

After set point is reached, let the jelly stand for a few minutes before filling jars, otherwise all the chillis will float to the top.

Thanks for that - partner made it and I forgot to tell him about letting it cool a bit, but he must have done anyway as the chillis are all nicely suspended - very pretty - unlike my floating gooseberries!

Chillies are my project for this weekend, so thanks for the jelly recipe - Christmas presents sorted!

Edited to say - I bought an excellent device from Lakeland. It's a sort of metal spice bag and I'll be trialling it this weekend.
