HELP! I NEED A FIX!
Someone please help me!
I need a chocolate fix!
I need a chocolate sponge cake recipie with no milk/dairy in it.
I have gone dairy free to see if it improves my health, so far it has just shown me how much i NEED chocolate!
I am used to the Butter, sugar, eggs and flour recipies and make them well, BUT
I know you can make a chocolate cake with oil in place of butter, but i have no idea how?
also, what could i fill it with? all of the icings and such that i know containd copious amounts of butter or cream.
SAVE ME FROM MY TERMOIL!

Will this do?
Azure Skye's vegan brownie recipe.
* 1.5 cups of Plain Flour
* 1 cup of sugar
* 1 tsp Baking Powder
* Pinch of Salt
* 2 heaped tablespoons of cocoa
* 1 tsp Vanilla extract (optional)
* 5 tablespoons oil (I use sunflower)
* 1 tablespoon malt vinegar
* 1.5 cups of cold water

Method/steps
1. Blend the dry ingredients really well, then make a dent and pour in the oil, vinegar and vanilla. Slowly add a bit of water and mix it up.
2. Then add more water. You might not need the whole 1.5 cups.
3. Mix well. This is a very wet mixture, should have the consistency of single, almost double cream.
4. Pour into a greased and lined square 18" pan and bake for 30 minutes at 175 c, gasmark 5.
5. When done, it may look wet on top, but a knife should come out clean still.
Additional Tips
Can put anything you like on top, like melted dark chocolate, or nuts and raisins, also very good with vegan ice cream. You may need to play around with the time and temp of your oven. Do not be alarmed if the cake still looks wet, it is a very moist cake!

I've had better success with using dairy free margarine and sticking to traditional recipies than trying to eliminate the dairy elements.
'Pure' brand dairy free margarine bakes well, and makes a passable (but not fantastic) buttercream icing.
You can get a soya cream imitation to use in place of cream, but I've not tried it.

5 minute chocolate mug cakeHow about this? I know it's got milk in, but you could sub soya milk, goats milk or probably just a bit more egg or some water. Is cocoa OK? I'm sure it would work in the oven with a bit of tinkering, too.
5 MINUTE CHOCOLATE MUG cake
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 teaspoons oil
3 tablespoons chocolate chips or (optional)
A small splash of vanilla extract and your favorite tipple
1 large coffee mug (tall latte cup works best)
Add dry ingredients to your largest mug and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using), vanilla extract and a drop or two of your favorite tipple, then mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug, but don’t be alarmed!
Allow to cool a little, and tip out onto a plate if desired.

Do you need other sources of chocolate chocolate as well?
Hmmmm.... can dig out some 'fillings and frostings' stuff as well if you like?
Tip - avoid Green and Blacks chocolate as its no longer dairy free....

The mug cake recipe is a bit like muffin, rather than cake. It was nice hot (would make good pudding with custard) but cold it's more muffiny. Tastes a bit shop bought. I might try it next time with butter. Also the mixing was hard in a mug - next time I would either do it in a oyrex bowl, or put the wet ingredients in first.
Seriously quick cake, though. Good for emergencies.
