how old is too old? for baconHi we have a 16m sow who has had one litter, is she only to be used for sausages, i was hoping to bacon her but the butcher said any sow was only good for sausages?
has any one experienced or tasted bacon from an pig over a year?

She will make good bacon & sausage. In fact she will have some great pork on her too. If you can self butcher then you can choose what to do with each bit by feel & look.

Yep, they make exceedingly good ham.
My first two were 14m old boars made the back legs into air dried hams & some good bacon and pork from them.
I've also read several articles where people only use older animals for curing because the muscle of younger animals is not toned enough.

hi thanks for the replies, it would have been great if she were 16 meters great for back bacon!!
Well from the replies it sound promising i am a bit worried about doing the curing at home this time of the year. We have to use bins and ice blocks in the garage and keeping the them low might be a problem if the sun begins to shine. As anyone anyother suggestions as we dont have a cold room

Tall larder fridge? Pick one up cheap / free, remove all shelfs drill two holes in top mount hanging rail. Might not be able to do full / 1/2 animals but will do the back for bacon easy. Also can do the backs & legs in bags & put on a normal fridge shelf.
