Ice cream made with clotted cream recipeHello! I was hoping that one of you might have a nice recipe for clotted cream ice cream. I got about 4.5 litres of the stuff out of a skip (proper Rodda's stuff too!) and then found about 3lb of strawbs yesterday so I wanted to make strawberries and clotted cream ice cream. Anyone have a recipe that doesn't involve an ice cream machine? I want to avoid using too much other ingredients to keep it as cheap as possible. I bought loads of eggs today for the purpose from the market. They're nowhere near as cheap as the farmers' market (£2 for 12 instead of £1.50 for 12) but it's fine seeing as I didn't need to buy the cream or the strawbs! Also got some rasps that I've chucked into a jar and am turning into rasp vinegar. They were a little too squished to keep.

Raspberry and almond ice creamThis recipe works using double cream and no ice cream maker, and is scoopable straight from the freezer. Dunno whether it would work with clotted cream, though .
300ml double cream
3oz icing sugar
some kind of flavouring e.g. jam or fresh fruit or cooked into a puree with sugar
a good handful of almonds, ground
whisk the cream and sugar together till stiff
add almonds and fruit
whisk more slowly to incorporate
put in tub and freeze
I think the almonds keep it scoopable. same goes for cocoa powder when making a chocolate version.

I ended up using this recipe. I changed it slightly though and instead of using milk, I stewed the fruit slightly and added that to the cream. Ialso just used clotted cream. There seemed no point in buying double cream when I had oh so very much of the lovely stuff. I should have added an extra egg to my second batch which had about 50% more cream but I forgot. I'm sure it'll still turn out fine though. I can't wait to taste my ice cream!
