Ideas for recipes using rasberries pleaseWe've had quite a good crop of Atumn rasberries this year and although I'm happy to eat them as it with yoghurt or cream, the boys would like something a bit more interesting.
Any ideas for simple puds using raspberries that even I can make and 'da boyz' will like?

I made this on Friday. Took moments to make, an hour in the freezer and it was done, and the only change was I added a handful of rasps to the mixture, used hobnobs instead of digestives and threw a couple of teaspoons worth of chilli flakes (yes, really) into the base.
Dee-lish.

Autumn raspberries make much better jam than the summer ones - half weight of sugar to rasps, boil to set. Keep in the fridge once opened. Beautifully tart, and ready for all sorts of puds through the winter.
Also, if you make a custard tart and plonk the raspberries in it, you get a lovely fruit and custard dish without all the stirring. I make huge great ones, intending to freeze some, but they never make it as far as the freezer, so I've no idea if they freeze alright, still. Mochyn might be persuaded to part with her raspberry curd recipe, perhaps?

It's Sunday. Do Sundays count in healthy eating?
(you can do custard tart with just full cream milk, and no cream if you don't mind it a bit wobbly. Or with a spoonful of flour if prefer a firm set)

raspberry vinegar is good, as is raspberry syrup. Or compote so you use less space in the freezer. Freeze in ice cube trays so you defrost what you need. A great year for wild raspberries up this neck of the woods.

The raspberry surd was just lemon curd using seived rasps. instead of lemon juice. The cake was the famous Downsizer yoghurt/citrus cake but with rasps. instead of lemons (again!).

Stew some down with plenty of sugar and a squeeze of lemon. Split into two batches.
One batch, when cool, mix with a plain custard and whipped cream ice cream base.
The other batch cook down a little to concentrate, and when its cool add it in to the raspberry ice cream as a ripple.
Thus making double raspberry ripple ice cream, which is to die for.
