I've just noticed that the ingredients lists include tinned sweetcorn, ready-made puff pastry and tiger prawns. Interesting definition of economy.

I think there can be 3 nicer meals had from a roast chicken than one boiled chook pillaged in that manner.

I'd be more likely to:
1. cut the breasts off and use them in a stir fry
2. boil the rest with stock veg, pick the meat off the legs and use it with some of the stock to make chicken pie filling (but not with cream or sweetcorn - yuk).
3. make a chicken noodle soup with the pickings from the wings and rest of the carcass (or a chicken soup with dumplings)
Occassional alternative to 2 and 3 would be to use the stock in a soup without any chicken in it (a nice minestrone maybe) and make a curry with the rest of the chicken.

Well to start with the veggies she's discarded would cost you a fiver in our local farmers' market, so at London prices She's chucked away a weeks shopping money! What was wrong with adding a few pulses etc and getting another meal out of it?

I thought her three meals were a bit dull and quite wasteful. I think I do better feeding 2 adults and two teenagers with:
- day one, roast chicken
- day two, chicken curry and rice
- day three, chicken noodle soup (includes real chicken stock, alternatively day three could be chicken stir fry which then gives you...
- day four, some kind of soup using the stock.
Then there's day five, on which you start the meal in some way using the saved chicken fat for, saying, frying an onion as a casserole starter, or sauteeing a few potatoes in chicken fat which is astonishingly good.
Did anyone see this week's Economy Gatronomy TV programme (same presenters as in Grauniad)? The family was spending £200 per week, because eating ready meals etc. Their challenge was to cook from scratch and spend no more than £130 per week (family of 2 adults and 3 children - two of the children only toddlers).
I was quite shocked that £130 was considered an economy budget as that amount spent on food per week would be inconceivable luxury to us. We spend about half that and eat well.
Some of these articles and programmes are just 'playing at economising' while actually being quite wasteful I think.

Not a roast chicken but a 2kg chicken will make us (two of us) at least 6 main meals plus 4 or 5 lunches for me
I would say
1 breast is stir fry or curry
1 breast is pasta or risotto
2 leg/thighs stir fry
2 leg/thighs casserole/stew
carcass to make stock and scraps which then makes
soup/stewp depending on the water
and add either perl barley or bulgar wheat to the left overs for a final meal
6 meals to serve 2, maybe 4 meals if you were feeding 4
