Leftover Lamb ~ what do you do with yours?

Hello all,

We had a delicious roast leg of lamb on Sunday, some cold yesterday with couscous & vegetables and the rest has been made into a stew today (boiled bones for stock then chopped lamb meat into a large pan with onions, carrots, potatoes, herbs & seasoning for the stew) & I've just bunged some dumplings in and it should be ready by the time the natives want feeding!

All very scrummy but not terribly adventurous so I thought I'd ask you lot ~ what do you do with your leftover lamb?

I love it best cold with chutney, jacket spud and salad. Or in a sandwich when I could still eat proper bread. Sometimes I shred up small bits for a stir-fry or to add to soup, but I think cold is best after the first meal.

I usually make a curry or tagine or something with it.

We baked a shoulder of lamb the weekend and had the rest in a biryani last night, lamb always works well in that sort of dish

It depends, if it's Kerry it tends not to surive the post-meal picking, if not we eat it cold through the week- sorry for not being very adventurous Smile

At least you don't eat it while it's still warm and walking around.

I know its really dull, but I love cold roast lamb with new potatoes, peas and gravy. The flavours are simple but fantastic and there's something very reassuring about the whole thing.


Shephard's pie's good also.

I made our leftover roast lamb into a rather splendid shepherd's pie. Fried an onion in the dripping I'd saved from the roast, added the cooked leftover meat, a scant teaspoon of home made damson cheese, a slug of balsamic vinegar, and the remains of the proper gravy I'd made to go with the roast. Some cooked chopped leftover carrots and peas also went into the mixture. Popped it into a dish and topped with mashed potatoes, into which had gone a spoonful of leftover double cream (spare, from cream I'd whipped to go with sunday's home made Pineapple Upside Down Pudding). I love making leftovers into something good.

It was fab. Very Happy
