In a processor, mix 100g butter, 100g sugar, two eggs, 100g self raising flour and the zest and juice of two lemons. Then stir in 100g blue berries.
Butter six ramekins, and line with a slice of lemon. Pour in a tablespoon of honey. Top with the batter mixture, and bake for either fifteen minutes at 190 degrees C, or 90 seconds in the microwave.
Im rather hoping they will reheat well, as I now have a stack of them in the fridge, and I'm going away tomorrow for a few days.
