Lemon curd icecream

Had a marvellous pudding a couple of night ago, basically you whip a pint of cream, stir in a jar of lemon curd, and crumble in about 4 meringue nests or equivalent, Stick the mix into a clingfilm lined loaf tin and freeze til wanted, serve in thick slices. Was really delicious, took about 5 minutes to put together and I could imagine it being a good one to do for a party Smile

I want some of that - I had an icecream maker for my birthday, which has only just arrived, and I'm thinking lemon-curd ripple. Blast, I've got to go on some stupid course this weekend! Grrrr. next week, then!

pound jar I think, but I reckon its a mix and taste and wing it sort of pud

Just made this again, and discovered that the bowl scrapings spread on a 'spare' meringue makes a fab sunday afternoon snack Embarassed

Made this today - added a shot glass of limoncello - hic Very Happy

That is a truly brilliant idea - I made lemon curd ripple icecream, and the lemon curd went a bit rubbery when frozen. A shot of limoncello would keep the texture nicely, I think.
