It's because its made from local nectar and if only lightly filtered can contain quite alot of pollen as well - The low levels of pollen trapped in the honey help the immune system build up resistance and therefore helps to relieve the hayfever symptoms - You are supposed to start taking it about a month or so before the main hayfever season
I only filter my honey to take out any large pieces of debris such as bits of bee and wax but try and leave the pollen in - unless I'm sending the honey to a show and then it gets filtered again through a very fine sieve
