Making Vinegar from scratch

I have looked at the recipe database but nothing there.

I had half a carrier bag of wine grapes that were smelling vinegary so I have crushed them with a potato masher and sieved the juice through muslin. Do I have to do anything to it or should I just leave it open to the air to get wine vinegar. There is approx 500 mls of lovely reddish stuff.

The best way of being sure of having vinegar is to introduce a fruit fly into the mix. This will produce a growth which is called ' mother of vinegar'. I think this can be filtered off and be preserved somehow. You could try looking on the River Cottage archive as I think it was discussed there a year or so ago.
