Mango Kulfi - Match's recipeI make mango kulfi (Indian ice cream) without any custard base, and with a very simple recipe (weights in brackets are approximate):
1 tin Mango Puree (400g)
3 Cardamom Pods
1 tin Evaporated Milk (400g)
1 (small) tin Condensed Milk (400g?)
Break open the cardamom pods, take out the seeds and discard the husks. Crush the seeds finely in a pestle and mortar. Mix all the ingredients in a bowl, pour into a suitable container, and freeze, taking out the freezer every few hours while setting and stirring well to prevent large ice crystals forming. Take out the freezer about 15 minutes before serving to soften, restirring if necessary.
You could replace the mango puree and cardamom with any other fruit/spice combination.
