Mish mash pie

Well Friday night I was at a momentary loss as to what to do for dinner. I didn't quite have the right ingredients for chilli con carne, nor did I quite have the right ingredients for steak and ale pie. So a compromise came upon me...

Steak mince was cooked in most of a 500ml bottle of Old Speckled Hen. Added were two beef stock cubes, a smidging more course ground salt, plenty of black pepper and several turns of the dried chilli mill thingy. That lot simmered gently for about 40 mins.

Meanwhile, some pastry was knocked up. I tend to be vaguely decadent and use all butter (not a 50/50 butter/lard mix). Slapped in the fridge to rest.

Coarsely chopped onion, plenty of coarsley chopooped garlic, a left over carrot that needed using cut into discs, a courgette Embarassed cut into discs, some mushrooms that need using, plus a good slug on olive oil and s&p. These were cooked onto a gentle heat for about 15 mins until the veg were tender.

Pastry slapped into an appropriate oven dish. Mince and veg combined together in the pan, then ladled into the pastry case. Egg washed around edge of pastry, pastry lid slapped on top and pricked with a fork. Washed with egg. In the oven for about 30 minutes.

Absolutely delishous. With a nice peppery finish too.
