Other than by the fact you've put this in Foraging, it's not clear from the enquiry what exactly he would like a practical course in, instead of watching DVDs.
Manners would be a good start.

Oh... Well there are certainly assorted residential courses in this kind of thing. Send him here to Downsizer to ask. Who is this from?

Not sure I understand this thread at all.
My "Mushrooms" courses are actually very cheap. My "manners" course, however, is terribly expensive.

He's just a guy that sent me two rather curt enquiries the other night because he wanted to do a course instead of buying the DVD (which is available on my site) I found that rather like contacting a butcher to tell him you're a vegetarian. I think gil's comments about being expensive was to make up for the fact that he might not come to it with the best set of manners, though if you could teach him some along the way then he certainly would benefit from it.
