Mushrooms

Just got a nice load of mushrooms from one of our fields.
There are 3 or 4 rings of them and I've left quite a few diddly buttons to get bigger.
An old timer told me to always cut the mushrooms with a sharp pocket knife and to leave the stump in the ground so that it would produce again. Was he right ? Question

When I pick mushrooms, I always cut the stalks just above the base, but that's so that I dont get soil from the stump going into my collecting bag where it can fall into the gills of previously collected mushrooms.

Depends. I think we had a thread on whether you are a twister or cutter Shocked , i.e. cut the stalk or twist. If you take care and twist leaving and little undeveloped shrooms and mycelium behind then that should be ok. Then you can cut the bottom of the stem off to keep the rest of the shrooms in your basket clean.
