nasturtium buds

I keep seeing references in books to the fact that nasturtium buds can be pickled as an alternative to capers. I love capers and so am intrigued by this idea - but seen no actual instructions or recipe for doing it.

Has anyone tried this? Were they nice? How did you pickle them?

never tried them but you have got me thinking I should....

As always, dpack has the answer.

Thank you for both of those - impressively speedy replies.

In this recipe it mentions pickling salt - anyonw know what this is?

I reckon it's the same as koshering salt. Quite big jagged crystals, so if you're using table salt instead cut the quantity back a bit.

I always thought it was the seeds that pickled like capers.... [confused]

Sorry, I ignored the bit that said 'buds'. Embarassed Really should know to RTFQ by now.

Looking at above links, obviously is the seed pods that can be picked - they are referred to as 'buds' in a couple of herb books I have - but I'm sure means the same thing. Capers are buds though, not seed heads, aren't they?
sean

Yep.

very nice
similar in style and use to capers but different ,maybe better

I've pickled a few to see how they get on, brined for a couple of days and then put in pickling vinegar. Even after a few days they seem rather tasty so I'm going to pickle some more.

I wanted to try this but wasn't sure which bit was used as people refer to them differently.

I used the seeds, which grow in threes, picked while still green and not ripe. I'll try and take a picture next time.

once a nasturtium has flowerd and the petals have fallen off you will see 3 seedpods forming, it is these that you collect when ripe/big enough and pickle and they look like capers.
Hpoe that helps

Just collected some more and here's a picture. I've been using some old pickled onion vinegar to pickle them as I'm just seeing how the go this year and I think that does add a pleasant extra taste to them.

We've got some going in a jar in the fridge - and ours look just like the ones in your photo (or did before being immersed in vinegar).

Partner has also tried putting some in a jar with lots of salt, like you get capers sometimes - but I don't know if you're supposed to do anything else to them first.

I've got a jar from last year somewhere pickled in balsamic vinegar as recommended by Dpack. I must try and find it.

until a couple of years ago, I thought that capers were pickled nasturtium seed pods. Rolling Eyes

Such a sheltered Shropshire upbringing. We didnt have posh delicatessens or Sainsburies. We had a mobile shop in an old Bedford van that sold Mothers Pride, Spangles and tough doughnuts.
