nasturtium budsI keep seeing references in books to the fact that nasturtium buds can be pickled as an alternative to capers. I love capers and so am intrigued by this idea - but seen no actual instructions or recipe for doing it.
Has anyone tried this? Were they nice? How did you pickle them?

In this recipe it mentions pickling salt - anyonw know what this is?

I reckon it's the same as koshering salt. Quite big jagged crystals, so if you're using table salt instead cut the quantity back a bit.

Looking at above links, obviously is the seed pods that can be picked - they are referred to as 'buds' in a couple of herb books I have - but I'm sure means the same thing. Capers are buds though, not seed heads, aren't they?

I've pickled a few to see how they get on, brined for a couple of days and then put in pickling vinegar. Even after a few days they seem rather tasty so I'm going to pickle some more.

I used the seeds, which grow in threes, picked while still green and not ripe. I'll try and take a picture next time.

once a nasturtium has flowerd and the petals have fallen off you will see 3 seedpods forming, it is these that you collect when ripe/big enough and pickle and they look like capers.

Just collected some more and here's a picture. I've been using some old pickled onion vinegar to pickle them as I'm just seeing how the go this year and I think that does add a pleasant extra taste to them.

We've got some going in a jar in the fridge - and ours look just like the ones in your photo (or did before being immersed in vinegar).
Partner has also tried putting some in a jar with lots of salt, like you get capers sometimes - but I don't know if you're supposed to do anything else to them first.

I've got a jar from last year somewhere pickled in balsamic vinegar as recommended by Dpack. I must try and find it.

until a couple of years ago, I thought that capers were pickled nasturtium seed pods.
Such a sheltered Shropshire upbringing. We didnt have posh delicatessens or Sainsburies. We had a mobile shop in an old Bedford van that sold Mothers Pride, Spangles and tough doughnuts.
