Non seasonal dinnerI've just found a couple of dressed pheasants lurking in the freezer so I'm defrosting them to cook for dinner later. I could casserole them in a full bodied red but I wondered if anyone has any more 'summery' recipes for pheasant?
Worth a try I think.

something vaguely oriental perhaps involving ginger and spring onions?

How about roasting them plainly then shredding the meat into a warm salad, maybe something with apples and walnuts in it?
Or casserole in cider with a few summer fruits
Or for something fiery chillis and chocolate work well with pheasant

What about pheasant satay? Or pheasant in BBQ sauce (barbequed, whether permitting) Or pheasant pancakes with hoisin sauce and cucumber and spring onions?

or marinade in drink ,n flavours
then oil and bbq slowly
serve with fruit sauce
there is a fruit sauce theme to my thought

Yes indeedy Dpack, great minds think alike!
I finished up roasting the birds and making a blackberry and cider reduction with a chopped shallot and a dollop of blackberry liquer. Although I say it myself it was divine.
P.S. It was also all sourced/grown/shot within 10 miles.
