MushroomsI got a tray of mush (all shapes and sizes) in the market this morning for £2.
What shall I do with them?

The Elizabeth David thing where you line a casserole dish with vine leaves and bake the mushrooms in it with some cloves of garlic is really nice. Just needs some crusty bread for mopping the juices and maybe a salad with it.

I'm such a stick-in-the-mud and conservative as far as mushrooms are concerned. I would use the appropriate amount and make a mushroom soup with nice spices and plenty of cream.

If you have any left drying them is a good way to store them. Thinly sliced, put something on top of a radiator for a day or so and when dry a few minutes in a warm oven to make them nice and crispy and put into jars. Then I add them to soups and stews.

Or you can fry them and freeze them for later use in stews etc.

I think I'll make some soup and dry the rest.
Mainly because I haven't got any vine leaves!

sauté them gently in butter with garlic and when nicely softened a little white wine, then either mix with some chopped tomatoes for a pasta sauce or blitz briefly and use to make ravioli.
